Carrot Beauty Noodles

Ingredients
9 cups pre-packaged spiralized carrots (or spiralize 6 large fresh carrots yourself)
2 cups organic edamame, shelled
2 cups brown rice or quinoa, cooked
1 avocado, cubed
2 Tbsp. fresh mint, to top
2 Tbsp. ground sesame seeds
3 Tbsp. organic red miso paste
3 Tbsp. Nature’s Intent Organic Apple Cider Vinegar
¼ cup rice vinegar
2 Tbsp. roasted sesame oil
2 tsp. honey
2 tsp. freshly grated ginger
2 Tbsp. reduced sodium tamari

Directions
  1. Cook rice or quinoa according to directions on package.
  2. In a medium mixing bowl, add red miso paste, apple cider vinegar, rice vinegar, roasted sesame oil, honey, ginger and tamari. Whisk well to combine.
  3. Add spiralized carrots, edamame, and cooked rice or quinoa. Toss well to coat.
  4. Garnish with avocado cubes, fresh mint and ground sesame seeds.
