Roasted Beets and Burrata Salad

Nothing beats these beets with creamy burrata

This is the kind of dish that only gets better as it rests. To make the most of all the flavors, make a day ahead and serve cold.

Roasted Beets and Burrata Salad

3 cups red beets, peeled, large diced

1 tsp. garlic, chopped

¾ tsp. kosher salt

pinch of pepper

¼ cup Nature’s Intent Organic Apple Cider Vinegar, plus 3 Tbsp. Nature’s Intent Organic Apple Cider Vinegar

6 Tbsp. olive oil

1 Tbsp. fresh basil, chopped

kosher salt, to taste

black pepper, to taste

1 ball burrata cheese

2 Tbsp. pine nuts, roasted

  1. Preheat oven to 350°F.
  2. Place beets, chopped garlic, salt, pepper and add ¼ cup Nature’s Intent Organic Apple Cider Vinegar in foil and close packet. Place on a baking tray and roast for 40-50 minutes or until tender. Remove from oven and cool.
  3. Mix 3 Tbsp. of Nature’s Intent Organic Apple Cider Vinegar, basil, salt, pepper and olive oil. Pour dressing over beets.
  4. Garnish with burrata cheese, pine nuts and basil leaf.
