Vinegar Chicken with Apples and Fennel

The apples don't fall far from the fennel in this effortless dish

This is a true one pan wonder! Succulent chicken thighs are simmered in a delicious sauce of tangy vinegar, fresh fennel and savory shallot.

Vinegar Chicken with Apples and Fennel

1½ lbs. boneless, skinless, chicken thighs

1 tsp. kosher salt

1 tsp. black pepper

2 Tbsp. butter

1 cup flour

1 small fennel bulb, large diced

1 shallot, large diced

3 Tbsp. olive oil

5 Tbsp. Nature’s Intent Organic Apple Cider Vinegar

1 Tbsp. fresh sage, chopped

3 Tbsp. olive oil

1 cup Gala apple, peeled, cored, diced

¾ cup apple cider

1 Tbsp. parsley, chopped

  1. Season chicken thighs with salt and pepper and dredge them in flour.
  2. In a large nonstick skillet, heat butter and sear chicken on each side for 2 minutes. Add shallots and fennel and cook for 3 minutes.
  3. Deglaze pan with Nature's Intent Organic Apple Cider Vinegar and add remaining ingredients. Simmer over low heat for 15 minutes or until chicken is tender. Adjust seasoning.
  4. Sprinkle with chopped parsley.
